Bridget’s tasty houmous recipe!

by on July 17, 2012

Not Houmous but just a nice!

I’m sure there’s a proper name for this, I just don’t know what it is! Don’t get me wrong, I live on houmous – there is no finer food! But when you fancy a change try this, it’s just as easy and just as nice!

1 tin of Cannelloni beans (also works with flageolet beans!) rinsed

1 clove of garlic

Juice of 1 lemon

½ teaspoon of vegetable stock powder

1 bunch of flat leaf parsley, chopped

1 teaspoon tahini

1 tablespoon of olive oil

Fresh ground pepper to taste (I like lots!)

Salt to taste

If you have food processor or blender whizz up garlic, lemon juice, stock powder and flat leaf parsley. Add tahini, olive oil, pepper and beans and blitz again. Be careful with the consistency – you don’t want it to be as smooth as baby food because that’s just a bit weird, but you can choose how lumpy you like it. If you find its too dry you may need to add a little water but be careful not to add too much!

Check seasoning and add salt if you feel it necessary.

If you don’t have food processor/blender it’s still doable! It’s just a matter of chopping everything as finely as possible and mixing. You can mash the beans in!
