Ian’s DIY Chutney: Recipe

Pumpkin chutneyIngredients
• 2 lb green tomatoes
• 8 oz onions
• 8 oz red apples (or green)
• 4 oz golden raisins
• 1 teaspoon salt
• 8 oz brown sugar
• ½ pint malt vinegar

Options –Use one of the options below (or make up your own)
o ½ teaspoon cayenne pepper , ½ teaspoon English mustard powder
o ½ tbsp pickling spices
o 1 tbsp mixed spices
o 4 hot chillies

Method
1. Peel, chop and put into a saucepan the toms, apples and onions.
2. Add half the vinegar and cook gently until toms and apples are soft, keeping the mixture well stirred.
3. Then add rest of vinegar and all other ingredients. and continue to cook steadily until the chutney thickens. This should take no longer than 15 minutes.
4. Pot up while still hot.
