Kale Recipes

KaleIt seems likely that we’ll get the last kale of the year in next weekend’s crop share and I have noticed that kale seems to be the in thing to juice at the moment. Much as I love kale cooked I’m not sure if I could get away with it in juice. If you’re braver than me give it a try:

Whiz up until smooth a big handful of kale, a chopped and cored apple, a celery stick, a piece of fresh ginger and some coconut water. Enjoy!

I am going to try kale pesto:

In a blender whiz up 50g kale, 40g toasted pine nuts, 45g Parmesan (or similar vegetarian hard cheese), 7tbsp olive oil and one garlic clove. If you need to loosen it a bit use a little water or stock. Lovely with pasta or on toast!
