Vegetarian Sausages Recipe

vegetarian sausagesHere’s a yummy sounding recipe from one of our work share members, Petra.

I’d love to hear from anyone who tries it!

 

 

Vegetarian Sausages
(Serves 4)

3  carrots finely grated
1 medium onion finely chopped
1 parsnip grated
4-5 large leaves of chard chopped fine
3 table spoons of linseed soaked in the water for couple of minutes (I ground them before soaking, but can be used whole)
Flour (used buckwheat but any will do)
Salt and pepper
teaspoon of paprika
1/2 cumin
2 teaspoons of marjoram

Mix all ingredients together  and create with hands a sausage shape, place on baking paper. Bake in preheated oven on 180 degrees for about 25 -35 minutes. I still had my Easter egg baking mould out so I put mixture in there to save a time so you can try any shape.

We had veggie egg shaped sausages for dinner with mashed potatoes, onion gravy and salad and leftover as you can see will do for lunch at work with lovely chard and radish salad.
