Although we have missed the recent pancake day, there are other days when you can eat them and we wanted to share the recipe for the fantastic pancakes that Kirsty made for our Willow Workshops recently – it’s certainly a different take on pancakes.
Pancake recipe (makes around 8x)
1 1/3 cup chickpea flour
1 cup water
1-2 tsp salt (ie to taste)
Add water slowly and beat well so it stays smooth. Put 1/2tsp veg oil in a hot pan and fry until golden brown on both sides.
Optional extras – add and mix in BEFORE the water – chilli powder, cumin, coriander, garam masala, dried mint, finely chopped green chilli, finely chopped chives, ajwain seeds, brown mustard seeds…. really anything you fancy.
You can see that the suggestions include some of the regular herbs grown by Go Local Food that you can take free with your crop share in the summer here. Don’t just think that pancakes are for one day in the year. Make the most of the herbs and try out different ideas!
