A spicy marrow recipe

marrow cakeSpicy Marrow Cake – you can use it as cake or as a vegetable recipe!


  1. 2 cups grated marrow (do not squeeze)
  2. 1 Tblspn olive oil
  3. 1 cup gram (chickpea) flour – Tesco sells this locally
  4. 1 tsp sea salt
  5. 1 tsp baking powder
  6. 1/2 tsp turmeric
  7. 1/2 tsp cayenne
  8. 1/2 tsp coriander
  9. a dash of dried chilli flakes
  10. a pinch of cumin and black pepper
  11. 1 tsp ground flaxseed


  1. Combine all the ingredients together (apart from the flaxseed) and leave for 10 minutes on the side. This enables the marrow to release some of its juices and turn the mix into more of a batter.
  2. Then add the flaxseed. Stir in gently and then pour into a lightly greased or lined shallow cake tray.
  3. Bake in a preheated moderate oven (180c fan) for about 30 minutes, or until golden and cooked through. A knife should come out clean. Leave to cool, then slice and serve, or freeze.
