Recipe for Omi Houriya


Organic carrots are in the crop share this week. The following is a recipe for Omi Houriya – a Tunisian dish – a bit like carrot Hummus. The only unusual ingredient is harissa which is a chilli paste widely available in supermarkets nowadays.

Ingredients: 300 g Carrots 1 1/2 tsp ground cumin 2 tsp harissa 1 1/2 tsp white wine vinegar Juice of 1 lime 1 1/2 tsp honey 5 tbsp extra virgin olive oil Salt and pepper

Method: Clean and cut the carrots into chunks and boil or steam until tender. Drain and puree in a food processor with all the other ingredients. Adjust the seasoning to taste and allow to cool. Use as you would a hummus – i.e. as a dip or spread, adding a drizzle of olive oil when serving.
