Getting into practice

Recent high winds have cleared many an apple and pear tree. Our grower Ian has about 25kg of pears and six times as much in the way of apples that count as windfalls. A major job will be turning these into fruit juice – pasturised and bottled should last a year. More will be pressed, stored in plastic bottles and frozen – if about an inch is left at the top of the bottle there is room for expansion on freezing so that the bottles don’t break. Ian should be well experienced by the time Go Local Food has its apple pressing day then!
